Actually, seeing the guy who you pledged yourself to use you as simple fodder is generally reason enough to betray him.
That and Chronic Backstabbing Disorder.
Plus, Anyone made at Acherus got the generic runeblade, regardless of physical states.

The people who pledged themselves to the Lich King weren't the fodder. As explained in the quote, they were the 'generals'. The EB .i.e dead Death Knights, were fodder. Made ONLY to attack Light's Hope.
