I haven't got a clue where to get the currency for these mounts. I have the gold and yet I can't buy a single Mount without this other currency. What is it? Where do you go to get it? Do you have to do any tasks such as killing certain creatures for these points? And what's with the rider training thing you need before you get a mount? Can someone help I'm completely in the dark here.

The mounts at the Argent Tournament Grounds require Champion's Seals, which you can get by 1. buying them off the panda (they cost 1g/seal), 2. doing Argent Dailies (which at level-80 will bring you about 400g a run).
Other than that, there shouldn't be any mount that requires any other currency than gold.
